New Year New You right?!? The absolute ultimate slogan for almost every woman each new year that comes around. I know that my personal New Year’s resolutions have remained the same for the past ten years. Lose weight, drink less, be present. All others have been accomplished HAHA! In regards to the losing weight part, for the past two years I have stayed pretty consistent with the 21 Day fix diet. And, if I am going to be completely honest, most diets I have seen have all fallen into a similar category to the diabetic diet I was on while pregnant with gestational diabetes. I digress, but my point is mainly that this meal will satisfy almost every diet, minus the keto, but you can substitute the corn tortillas with fried lard chunks if need be! It’s funny because it’s true!
This particular breakfast is the breakfast that I eat EVERY SINGLE DAY! Why just posting about it now you ask? Well that’s easy. I didn’t think it was anything special because it’s totally healthy, no real genius needed in the cooking department, and this meal I eat every day just slipped under my blog radar! But that’s when I saw the light, this meal is totally healthy, not hard, full of flavor and meets all criteria for most balanced diet meal plans! It has an appropriate carb portion, protein, vegetables and healthy fat! Everything can be prepped ahead of time if you are in to that, it tastes awesome and I literally just kicked myself for not posting this sooner. Like for real, just stood up off my couch, holding my laptop, and kicked myself.
Juevos Rancheros is just another word for flavor packed awesomeness. Anytime I am on a diet, southwest flavors are what tickle my taste buds to total satisfaction. The healthy modifications I have made to this dish include spraying two corn tortillas with Pam and then cooking them on high in the toaster oven. Sounds crazy right, but it turns them into a chip with a slight chew, and is totally delicious. Now, every toaster oven works differently, but this is something you will definitely want to keep your eye on! Don’t put them in and go take your morning BM if you know what I mean! Toasting these “chips” in the toaster oven takes this dish to the level that it needs to be in order to even call it juevos rancheros. The chips are delicious and a side note, use these chips for anything else too!
The next healthy change I have made is using one whole egg with two egg whites, and making it into “omelet’ form. I combine roasted red peppers into the eggs, cook it into an omelet and then fold it twice, cut it in half and place it upon the toasted chips. Choosing the roasted red filled omelet form (roasted red is just a cool way to say roasted red peppers) over the fried eggs allow the eggs to create a larger mass, making the dish heartier and also less messy, which in the early mornings with all kinds of things needing to be done can be super helpful right!
The toppings are up to you. Mine always include a little salsa, nonfat Greek yogurt instead of sour cream, diced avocado and hot sauce. And seriously, my cilantro green sauce is FANASTIC upon this dish! Not even kidding, this proves it goes with everything! Feel free to add shredded cheese or any other toppings that bring your taste buds to the same level as mine!
So whatever diet you have committed to, or even if there is no diet involved at all (lucky!!), give this recipe a try! It is super easy to keep on hand, make and is awesome to enjoy, so why not right?!? You’re welcome!!!

- 1 Egg
- 2 Egg Whites
- ½ Roasted Red Pepper, chopped
- Pinch Salt
- Pinch Pepper
- 2 Corn Tortillas
- Romaine or Iceburg Lettuce
- Greek Yogurt (nonfat) (Optional)
- Hot Sauce (Optional)
- Cilantro Green Sauce (Optional)
- ⅓ Avocado, chopped (Optional)
- Combine eggs, chopped roasted red pepper, salt and pepper in a bowl, whisk together. Spray Pam on corn tortillas and place in toaster oven, on highest toaster setting (WATCH CAREFULLY WHILE COOKING EGGS). Place Romaine lettuce on corn tortilla. Over medium heat, spray Pam in a nonstick pan and cook omelet, about 2 minutes, and flip. Cook another minute and fold over twice, cut in half and place a half on each toasted corn tortilla. Finally, layer with your favorite toppings. My favorite order: Salsa, Greek Yogurt, hot sauce, Cilantro Green Sauce, chopped avocado.
